The world’s greatest butcher will be serving paninis at Maxwell Food Centre this March

Fans of the Netflix series Chef’s Table will be familiar with Chef Dario Cecchini, dubbed as the world’s greatest butcher by the New York Times. Just last year, he opened Bottega di Carna at the Mondrian Singapore Duxton, and this year, he’s back in town for an exciting collaboration.

Come March 6 and 7, Cecchini and Bottega di Carna’s Head Chef Kenny Huang will be teaming up with the Chinatown hawker stall Bold & Braised at Maxwell Food Centre for a lunchtime pop-up. He will be whipping up signature paninis from the menu of his popular food truck back in Panzano, Tuscany. 

These include the Panino Pastarmino ($6.50), featuring seven-day marinated beef brisket with Cecchini’s special sauce, and the Panino con Guancia di Manzo ($6.50), which sees beef cheeks slow cooked for over 16 hours with Italian Sangiovese red wine. There will also be a special collaboration panini – the Braised Pork Belly Panino ($6.50) – featuring Bold & Braised’s signature pork belly which is marinated in herbs for one day and braised for another. All the paninis will be served with Cecchini’s salt and olive oil imported from Tuscany, and homemade bread from his Tuscany Pane Rosetta recipe.

Cecchini is known for his food philosophy of honouring the animal, and using every cut from nose to tail. He has also cooked for the likes of Elton John, Anthony Bourdain and even King Charles III. 

Apart from his collaboration with Bold & Braised, Cecchini will be joining hands with Chefs Kenny Huang and Syrco Bakker for an exclusive two-night dinner at Bottega di Carna on March 8 and 9. He will also be unveiling new permanent menu additions at the restaurant during his visit to Singapore next month.
