Any luxurious evening should start with a glass of Champagne. At the Sofitel Sydney Darling Harbour’s Champagne Bar, they’re dedicated to upholding this principle. This winter, they’re offering a special menu to accompany the king of respectable apéritifs: a glass of Veuve Clicquot.

There’s two delectable dishes on the Veuve Clicquot Aperitif menu to pair with your sparkling refreshment. The first is a serve of pickled oysters, sweetened by a generous dose of sake. A cucumber granita adds a burst of summer vitality, countered by the warming spiced apple foam and tied together with flying fish caviar.

If you’ve been dreaming about a creamy fromage accompaniment, you’ll want to try the burrata. This Italian buffalo milk cheese is like a softer, silkier version of mozzarella, and comes spiced with a peppery mix of dukkah alongside zesty preserved lemon. Blood orange adds a little punch and sweet peas balance the acidity of the dish.

Designed by the Sofitel’s executive chef, either of these exciting menu items, paired with a glass of Veuve Clicquot, could be yours for $39 each.
