The Mercure Sydney's revamped ground floor bar features cocktails, locally made craft beer and a tempting menu

If you’ve been poking your head around George Street of late, you may have noticed that Mercure Sydney’s ground floor bar has had a bit of a makeover. The new look includes a complete overhaul of their menu and beverage list – and the result might just make Eve’s a go-to hub for the after-work drinks crowd, students and those keen to explore Sydney’s emerging Chippendale precinct.

Hit the bar first for Eve’s selection of local craft brews. With Sydney Brewery just down the road, they’ve picked the best of the bunch – the very locally named Paddo Pale Ale, Glama Rama Summer Ale, Love Dale Lager and Darlo Dark – and swaddled them together in a beer paddle that’s easy on the palate and the wallet. Cocktails tantalise the taste buds, with Eve’s Apple Pie cocktail a standout for adventurous drinkers and the Chilli Pu Margarita best for those looking for a real kick.

Kitchen-wise it’s all about the burgers. Come hungry as there’s seven to choose from, ranging from a lamb and halloumi to a barbecue pulled pork. Our pick is the Great Southern with buttermilk marinated chicken sandwiched together with lettuce, tomato and a smoky chipotle burger sauce. Pair your burger with a serve of loaded fries or their Blanket Wedges, which are wedges with a ‘blanket’ of bacon, melted mozzarella, sour cream and sweet chilli. 

Students are invited to stop in after lectures and obtain a loyalty card, which will give them every seventh drink and meal for free. Park yourself in either Eve’s spacious indoor space or bustling outdoor seating and overlook the buzz of Railway Square while toasting to the week that was.
