The menu's showstopper would have to be the La Fiesta Del Fuego (that translates to the festival of fire), which sees a punchy rum cocktail finished with flames. If you're after a vacation in a glass, opt for the Tina Colada, complete with organic coconut milk and pineapple infused rum; and if you're looking for something with some bite go the Italian Job, which is made from shiraz gin, Campari and Cynar.
As always, Hacienda's Cuban-inspired bar snack menu will be available to complement your drinks. Order up pumpkin flowers with whipped ricotta, black olives, yellow box honey and baby herbs; grilled prawn skewers with pineapple salsa and roasted chilli oil; or tuna ceviche served with avocado, black sesame and blue corn tortillas. Add in panoramic views of the harbour plus DJs behind the decks on weekends, and you've got an excellent way to welcome the warmer weather.
