Barangaroo restaurant 12-Micron has just launched its new seasonal menu, showcasing Australian produce and ingredients, all inspired by the earth, ocean, land and air.
Starters focus on fresh flavours including freshly shucked oysters, lemon aspen granita with seaweed crisps, and kingfish and fennel with jalapeños and finger lime.
The restaurant caters to vegetarians with dishes like yam, olive, feta, basil with aniseed myrtle; celeriac with truffle and wattleseed; and pumpkin with orange and coconut.
Other dishes showcase Australian seafood and meat, including Moreton Bay bug with prawn and crustacean sauce; pork jowl, black pudding, riberries with chestnuts; lamb with purple carrots quinoa, curds and whey; and duck, beetroot, macadamia and alpine pepper.
