The brains behind Belles Hot Chicken and A1 Canteen are teaming up for a Kiwi Clambake

From time to time, chef Clayton Wells and the gang at A1 Canteen invite one of their nearest and dearest friends (who also always happens to be a really good chef) to the Chippendale eatery for a one-off collaborative dinner as part of the A1 & Friends series.

On Monday, August 26, that chef is Morgan McGlone – the man, myth and legend that brought us Belles Hot Chicken. There won’t be any bird on the menu that night, however. Instead, they’ll be nodding to McGlone’s New Zealand heritage and whipping up a Kiwi clambake featuring Cloudy Bay Clams.

The $55 set menu starts off with a clam chowder, before moving on to tried-and-true dishes from both chefs’ repertoires: McGlone’s clam po’ boy with remoulade and Old Bay, and Wells’ umami-packed steamed Tua Tua clams with anchovy butter and preserved lemon. The main event, of course, is the clambake itself – a jumble of steamed shellfish, sweetcorn, chorizo, potatoes and dash butter, with a yam salad on the side. Booze sticks to the NZ script as well, with Wellington’s Garage Project brewery on drinks duty. 

Bookings will be taken from 6pm, with additional seatings at 6.30, 7.30 and 8pm.
