Having a few at Los Barbudos or Mr Wow’s and need some ballast? Follow the neon “food” signs to the warehouse out back that resembles a Caribbean yard for the revamp of Jabili’s Kitchen. It’s now called the Voodoo Jerk Truck, doing away with the African menu. Jabili is still on the pans and now operates with handwritten blackboard menus listing the “jerk” and “not a jerk” dishes. (Newbies, jerk is a hot, flavour-filled rub that can give any protein or vegetable a whole lot of kick.) Think fried chicken with rum pickled veg; jerk pork ribs with cooling mint yogurt; charred corn bread with a tamarind sauce; and a roasted cauliflower salad with almonds, currants and pickled onions. Balance your order on tables made from old kegs and get stuck into it. And don’t despair over the loss of Jabili’s African menu: he’s rolling over the tradition of Monday night’s five African flavours on moreishly sour injera bread and pickled veg for $35.
