NYC is getting its first-ever cheese conveyor-belt restaurant

London's famous fromage purveyor Pick & Cheese is setting up shop at the new Shaver Hall food market

New York City’s dining scene has seen it all, from sushi belts and robotic bartenders to ramen served by industrial conveyor. But cheese? That’s new. Come early 2026, Manhattan will welcome Pick & Cheese, London’s cult-favorite cheese conveyor-belt restaurant, opening its first U.S. outpost inside Shaver Hall, the massive new food hall taking over the former Lord & Taylor flagship on Fifth Avenue.

Here’s how it works: diners grab a seat at the counter, and a slow-moving belt carries a parade of plates beneath glass domes. Each one holds a small portion of artisan cheese—think creamy wedges, crumbly hunks, oozy drizzles—all paired with a clever accompaniment, like tomato and chili jam or rose Turkish delight. You just pluck what catches your eye and make your own cheese plate.

The idea is the brainchild of Mathew Carver, founder of London’s Cheese Bar group. His cheese journey started modestly in 2014 with the Cheese Truck, slinging grilled cheese sandwiches at London markets and music festivals. But Carver noticed that even his most die-hard cheese-loving friends couldn’t name a British cheese they were proud of. So he made it his mission to spotlight farmstead producers close to home.

That mission eventually led to the first Cheese Bar restaurant in Camden, and later, Pick & Cheese in London’s Seven Dials Market in 2019. The concept took its cue from the world’s first sushi conveyor-belt: take something traditionally luxurious, strip away the snob factor and make it fun. The London spot became an instant hit. Berlin followed in 2025. Now, it’s New York’s turn.

While the Covent Garden location champions British cheesemakers and Berlin’s celebrates German producers, the Manhattan menu will highlight American artisans, especially those from the Northeast. Expect to see cheeses made with milk from small herds and makers who know their farmers by name.

So if your idea of a perfect night out involves a glass of natural wine, a lineup of small plates and a conveyor-belt carrying endless cheese possibilities, keep an eye out for the big day when Pick & Cheese lands in Midtown.
