Banana splits don’t usually come with guacamole. Or chicken bites. Or 23-karat gold flakes. But then again, Serendipity 3 has never played by the rules.

The whimsical New York institution, best known for its Frrrozen Hot Chocolate and movie-scene cameos, is teaming up with Doritos to serve a National Banana Split Day creation no one saw coming: the Doritos Golden Sriracha Split. It lands today, August 25 and sticks around just through Labor Day, which means you’ve got exactly one week to see what happens when sweet meets spicy, crunchy meets creamy and classic dessert meets snack food fever dream.

So what’s in this split-that’s-not-really-a-split? Forget the trio of scoops—here you’re looking at an oven-roasted sweet plantain “boat,” filled with Doritos’ new Golden Sriracha chips and topped with chicken bites in sweet chili sauce, guacamole, sour cream and pico de gallo. A cherry tomato stands in for the sundae’s cherry on top, while drizzles of golden sriracha sauce and edible gold flakes finish the whole over-the-top affair. It’s equal parts savory spectacle and Instagram bait, priced at $22.95.

“This is unlike anything we’ve done before,” says Chef Joe Calderone, Serendipity 3’s creative director. “We wanted to bring a savory, spicy surprise to our guests—and Doritos Golden Sriracha gave us the perfect crunch and tangy flavor to reimagine what a banana split can be.”

It’s a bold move for both brands: Doritos, which just dropped its Golden Sriracha flavor, is angling for culinary collab cred; and Serendipity 3, with its jewel-box dining rooms and celebrity fan club (Beyoncé, Andy Warhol and Marilyn Monroe among them), is reminding us that dessert can still surprise.

Will it taste amazing? Confusing? Life-changing? Probably all three. But in a city where dessert already comes deep-fried, glitter-dusted or served in cereal milk, a Doritos banana split feels like the natural next step.

Catch it at Serendipity 3’s Upper East Side flagship or its newer Times Square outpost through September 1—then watch it vanish into the annals of NYC food lore, right alongside Cronuts, rainbow bagels and other short-lived, long-memed creations.
