There are plenty of perfectly respectable ways to eat pie: one slice at Thanksgiving, a wedge after dinner and maybe a forkful stolen straight from the fridge at midnight. But Dominique Ansel has a considerably more ambitious proposition: 90 minutes, 10 different pies and absolutely no limit on how many slices you can put away.

Pie Night, the beloved annual feast at Dominique Ansel Bakery, is officially returning to Soho this September for its 12th year. The all-you-can-eat event will take over the bakery for nine nights, with three 90-minute seatings each evening—and tickets go on sale this Friday, August 21, at noon on Resy.

This year's theme is taking inspiration from holidays throughout the year, turning everything from Valentine's Day to Thanksgiving into five savory and five sweet creations. On the savory side, expect a St. Patrick's Day pie with Irish cheddar, caramelized onion and roasted potato; a Lunar New Year pork-and-shrimp dumpling "lasagna" pie; a Fourth of July mashup of BBQ chicken and mac and cheese; a Thanksgiving pie packed with braised turkey, stuffing and green bean casserole; and a Christmas-inspired braised short rib Beef Wellington pie.

The five sweet options include a Valentine's Day strawberry-and-vanilla rose pie; Pi Day salted-caramel apple pie; Easter carrot cake and coconut mousse pie; a Halloween chocolate-and-peanut-butter creation; and a New Year's Eve pie filled with Champagne, yuzu and mandarin citrus meringue.

And yes, the "unlimited" part really does mean unlimited. Guests can go back for as many slices as they can handle during their 90-minute session. Ice cream will also be making the rounds, while Hendrick's Gin will provide cocktails. Warm apple cider is also included.

Pie Night runs September 8–10, 15–17 and 22–24, with seatings from 5–6:30 pm, 6:45–8:15 pm, and 8:30–10 pm at Dominique Ansel Bakery in Soho. Tickets cost $110 per person.

Given that this is a chance to eat unlimited pie from the pastry chef who gave New York the Cronut, you may want to set an alarm for Friday. Pie waits for no one.
