This new British-Indian chophouse is the latest in Michelin chef Sujan Sarkar’s big Hudson Yards takeover

Sarkar is bringing London chophouse traditions and Indian flavors together at his second restaurant inside Henry Hall.

Hudson Yards is getting a little taste of London—by way of India.

Chef Sujan Sarkar is opening Elder, a contemporary British-Indian chophouse on the ground floor of Henry Hall at 517 West 38th Street. Inspired by London’s old-school chophouses but filtered through Sarkar’s Indian heritage, the restaurant brings together steaks, seafood and British classics with Indian spices, sauces and cooking techniques.

It’s also the second piece of what is becoming a full-blown Sarkar takeover of Henry Hall. In May, the chef opened a New York outpost of Indienne (his Michelin-starred Chicago fine-dining restaurant) upstairs. By the end of the year, he plans to add Apas, an intimate cocktail bar, completing a three-concept mini empire under one roof.

But first: chops. Elder’s menu is where its British and Indian influences get especially fun. You can start with a quail Scotch egg with mustard aioli and pickled shallot, an English pea and fava samosa or caviar and crumpets before getting into heavier hitters.

The centerpiece is a lineup of steaks and chops including Berkshire pork rib chop with vindaloo masala, hanger steak prepared as pathar kebab, lamb chops with burrah spice and a 30-to-32-ounce, 32-day-aged bone-in rib chop. Sauces include red pepper makhani, horseradish raita and bone marrow nihari gravy. Elsewhere, there’s a buffalo paneer lasagna with Swiss chard saag, Dover sole with curry beurre blanc and tandoor chicken roulade with tikka masala.

The British-Indian mashup continues through dessert, with strawberry Eton mess with rhubarb and rose, rasmalai trifle with pistachio ice cream and jalebi crisp and banana rum baba with banoffee Chantilly and elderflower.

Cocktails lean into London drinking culture: the Elder Gibson mixes London dry gin, sirka brine, dry vermouth, pearl onion and gooseberry, while the London Fog blends Earl Grey-infused gin with coconut, vanilla and lemon.

The 3,300-square-foot restaurant has room for roughly 100 diners across its bar, dining room and outdoor patio, with hunter-green walls, English walnut, Carrara marble and botanical wallpaper giving the place a polished London-club feel.

Elder opens on Thursday, August 6, and will be open Tuesday through Saturday from 5pm to 11pm.
