As of late, the city has seen an uptick in restaurants that specialize in Scandinavian cuisine. In the past year alone, we've welcomed NYC's first Nordic cocktail bar, Kabin, while open-faced sandwiches and pickled herring can now be found in Clinton Hill, thanks to a second location of Smør. Adding to our Rolodex of options is Hildur. Just a few months old, the restaurant focuses on Scandinavian cuisine with a touch of French bistro classics. In honor of the coming summer solstice, the restaurant is bringing a taste of Finland to Dumbo.
For two days, Hildur will be home to Taste of Finland – A Midsummer Pop-Up. In collaboration with Visit Finland, the two-day event will channel Finland’s rich culinary traditions, contemporary flavors and sustainable ethos. Bringing the soul of Finland to life are Bronx-based private chef and current competitor on season 22 of Top Chef, Lana Lagomarsini, Helsinki-based chef Ina Niiniketo, and Hildur's executive chef, Brennan Taulbee. The six-course tasting will include a modern interpretation of Finnish comfort food, potato chips & crown dill; sorrel-cured salmon with sorrel whipped crème fraîche; and charred cabbage with beurre blanc, trout roe and fennel. For a bit of summer flair, try the strawberries with strawberry meringue, elderflower and cream for dessert.
