The menu introduces a lineup of four signature classics, as well as six must-order dishes

One year after opening its doors in Singapore, Peking Chamber from Beijing is celebrating the milestone with a refreshed menu spotlighting the dishes that made it one of its city’s most sought-after restaurants.
Founded in Beijing in 2008, Peking Chamber has grown into one of China's most popular restaurant brands. The restaurant, whose flagship is near the Forbidden City, is notorious for wait times stretching up to five hours. Today, the brand has more than two dozen outlets across Beijing and Shanghai, and has been earning a place on Dianping's Must-Eat List for nine consecutive years.
To celebrate its first anniversary in Singapore, its outpost at Weave in Resorts World Sentosa has unveiled a refreshed menu. However, instead of introducing new dishes, Peking Chamber is doubling down on the dishes that earned it cult status back home, introducing a lineup of four signature classics, as well as six must-order dishes.
Before that, start with the restaurant's famed roasted tender duck ($68 for half, $118 for whole). Each duck is air-dried before being roasted over fruitwood in a traditional hanging oven, producing crispy skin and juicy meat. There are many ways to enjoy this one – from dipping the skin into white sugar, to wrapping slices in pancakes with sweet bean sauce, or giving it a fruity twist with imported begonia plum sauce from Beijing.
Moving on to the refreshed menu, you’ll find four signature classics: prime stewed assorted treasure seafood, braised sea cucumber with scallion ($68 per person), selected grilled lamb with scallion ($45), served in a copper vessel imported from Beijing, and stir-fried 3A Wagyu with scallion.
Meanwhile, the six must-order signatures include mixed bean sprout with sauce ($19); a seafood medley of jellyfish head, shrimp and octopus ($39); crispy deep-fried shrimp with honey sauce ($39 for six pieces); pan-fried lamb sauce with vegetable sauce; sweet and sour sauce marble goby; and stewed crispy pork with vegetables and vermicelli.
Beyond the anniversary lineup, don't miss Beijing's beloved zhajiang noodles ($12). End on a sweet note with the Beijing-style snacks platter ($38), featuring five traditional handmade pastries including Lüdagun, Aiwowo and Pea Flour Cake.
