This month, we’ve handpicked five exciting F&B openings across the city worth adding to your Eat list, starting with a casual handroll bar in the CBD where rolls go for $7 each. Then, sneak behind the wood-fire oven of Il Clay to discover a secret dining lounge where Italian and Chinese flavours meet in the middle, or try Singapore’s first A5 wagyu tomato sukiyaki at the new Sukiyaki Jin in Orchard. If your go-to spots for handrolls rotate between Rappu and Sushi Zushi, here's a new one to add to your list. Rolls Izakaya is a casual Japanese handroll bar in Mercure Icon Singapore City Centre, and at its heart is a 16-seater curved counter where you get to watch each bite meticulously assembled right before your eyes. Chefs Max and Raymond bring years of experience across Japanese fine dining restaurants, including Hiryu, an established omakase joint in Singapore. For lunch, Rolls offers a well-priced $28 set where diners get to choose between six types of sashimi, including salmon, tuna, hamachi and engawa, or a six-roll set for $38, which averages at $6.30 per roll. Beyond handrolls, Rolls also offers sides like sesame ponzu tai carpaccio and okonomiyaki, as well as donburi bowls like the salmon mini don ($6.80) and a chirashi bowl with eight kinds of sashimi ($19.80).

Il Clay might be the de facto pizzeria in Clarke Quay for traditional Neapolitan-style slices, but this month, it's introducing a new alter ego. Venture past the wood-fire oven and enter Behind Clay, a stylish 52-seater dining lounge clad in sultry burgundy tones. At the helm are Chef Ciro Sorrentino, whose pizzeria Margheri is ranked No. 12 in the 50 Top Pizza Asia-Pacific 2026 list, and Chef Yip, who brings two decades of experience crafting modern Chinese menus across Shanghai and Singapore. Chef Sorrentino's 48-hour fermented dough remains the highlight, but expect the unexpected in terms of flavours and toppings, from a foie gras pâté pizza (from $38) with tamarind sauce, fior di latte, pineapple puree and pistachio, to a butternut chicken version (from $26) with pumpkin puree, butternut chicken curry, pork floss and green peppercorn sauce. Other highlights include the spicy shrimp carpaccio ($28) and mala shaker pork belly ($20).

Something new is bubbling at Shaw Centre. Sukiyaki Jin is the latest casual dining concept to join the Les Amis Group, which currently manages several other Japanese F&B restaurants like Shabu Jin, Wagyu Jin and Tenjin. The highlight here: towering pots with A5 wagyu beef layered over vegetables, and Singapore's first spicy tomato sukiyaki broth. There are only two options to choose from: the signature tomato sukiyaki ($48 per person) or the original sukiyaki ($45 per person or $90 per pot), both requiring a minimum of two diners. Beneath the layer of well-marbled beef sits a generous assortment of shimeji mushrooms, napa cabbage, enoki mushrooms, chrysanthemum greens, tomatoes, tofu, Japanese leeks and konjac noodles. Apart from that, there are optional add-ons like 100 grams of A5 wagyu ($38), konjac noodles ($6) and vegetables ($2 per serving). To finish, diners can choose between inaniwa udon or cheese risotto made in the remaining broth.

Haven't gotten enough of the samgyetang craze? Check out this new samgyetang specialty restaurant in Novena Square, fashioned like a Korean herbal medicine shop from the 1980s. Think dark timber surfaces, rows of medicinal cabinets and picture-perfect interiors. Before settling in, you'll be given a quick questionnaire to gauge how your body feels that day, then recommended a samgyetang flavour based on your current condition. There are six main flavours, from the signature Vitality Tonic ($25) to the Immunity Black ($28). The former sees glutinous rice-stuffed young chicken with ginseng, jujube and garlic, slow-cooked till it's fork-tender, while the latter is built to replenish energy and boost immunity, featuring slow-aged black garlic and a nourishing, warming broth. Beyond samgyetang, diners can also try a range of kalguksu (hand-pulled noodles) and porridge, or indulge in sharing pots of spicy chicken, or whole chicken with mushrooms.

This sushi chain from Shibuya, Tokyo, took Singapore by storm when it opened six months ago. The highlight? Affordable sushi starting at just $1.99 a piece. Michelin-starred Japanese chef Hiroyuki Sato is a master of Edomae-style sushi, that is, a traditional style of sushi where preparation methods are rooted in enhancing the natural flavours of the seafood. At Sushidan Singapore, Chef Sato leaves things in the good hands of Chef Yusuke Kawana, who has over 28 years of experience in the craft. Now, the restaurant brings that same quality and accessibility behind its main dining room, with an intimate six-seater private dining omakase counter. This exclusive chef's counter offers an omakase set from $98, which is reasonable by today's standards. The 15-course journey will include appetisers, sashimi, sushi, a hot dish, grilled dish, handroll and dessert. Don't mind topping up? There are also premium seasonal menus at $138 or $238 per person.
