Four dining concepts – from a wood-fire chophouse to a cabaret cocktail bar – anchor the property

Nomad – the New York hotel brand known as much for its restaurants and bars as its rooms – is opening its first Asia-Pacific property in Singapore in late 2026.
It won’t be just another place to stay the night. Nomad Hilton has earned a reputation for treating its F&B concepts as destinations in their own right. And instead of simply transplanting the brand into Singapore, the team says each of Nomad Hilton Singapore’s new concepts have distinct identities that draw from Singapore’s dining culture, nightlife, and social scene.
Bringing the New York glamour is Nomad Grill, a classic NYC chophouse with downtown energy. You can look forward to dry-aged meats sourced from around the world and cooked over woodfire, alongside seafood, seasonal produce, and brasserie staples.
The Singapore flair comes through more clearly in Sticky Fingers. During the day, it'll dish out house-made gourmet soft serve and sundaes. Once the sun goes down, the space morphs into an intimate cocktail bar where desserts and drinks with unique flavour pairings are served, with local ingredients woven throughout the menu.
Meanwhile, The Tropicana Club pays homage to Singapore’s Tropicana Club, a pioneering entertainment complex that defined the city’s nightlife in the 1950s. Further inspired by Havana's legendary Tropicana Club (1939), the result is a contemporary cabaret-inspired cocktail bar serving Martinis, Daiquiris, Manhattans and tropical classics, alongside live music and curated DJ sets.
Rounding out the quartet is Lú Bar, a lush rooftop poolside lounge designed for slower afternoons and golden-hour drinks. Expect aperitivo cocktails and refreshing pours.
Powering the drinks programme is Leo Robitschek, the award-winning bartender whose work at Nomad has earned accolades including a James Beard Award for Outstanding Bar Program and recognition on the World's 50 Best Bars list. Joining him is newly appointed global culinary director Josh Harnden, whose résumé spans more than two decades and includes high-profile restaurants Eleven Madison Park, One White Street and The Noortwyck.
On the ground in Singapore, the hotel's culinary direction will be led by Lorenz Hoja, whose career has taken him through acclaimed kitchens across England, France, Austria, the Maldives and Singapore. He also spent more than a decade working alongside legendary French chef Joël Robuchon, including at Singapore's former two-Michelin-starred L'Atelier de Joël Robuchon.
