Loulouca is a new dessert atelier along Ann Siang Hill by Odette's former pastry chef Louisa Lim

We check out this day-to-night concept entirely dedicated to desserts – here are our thoughts

At Loulouca, dessert is not an afterthought; it's the main event. This new atelier along Ann Siang Hill is the first solo project of pastry chef Louisa Lim, who was named Asia's Best Pastry Chef in 2023 and recently completed an illustrious seven-year stint at the three-Michelin-starred French restaurant Odette. Here, you won't have to wait till the end of a two-hour dinner to reach the sweet part – you can skip right to it. 

The day-to-night concept is split into two distinct zones. Out front, a takeaway pastry gallery and coffee counter offers four signature entremets priced between $14 and $16 each. Or, you can grab a discovery set with all four for $55, which seems to be the popular choice. Other details anchor the space: a small merchandise shelf, a split-flap board displaying the current song on the store's playlist, and a mini ice cream counter with three house-made flavours – sobacha, earl grey and pistachio. These scoops are available till 11pm, ideal as a post-dinner treat if you happen to be around the area.

Behind the sliding doors is an intimate 20-seater dining room, where you can enjoy the atelier's four signature entremets and ice cream for dine-in during the day. Come evening, the menu switches up completely, with four plated desserts (from $28 to $35), available à la carte alongside suggested alcoholic and non-alcoholic drink pairings. The space is bathed in neutral tones, with a plating counter right by the end, next to a semi-open kitchen where you can catch Louisa and her team at work.

Loulouca ($16), the atelier's namesake entremet, is inspired by tiramisu. A luscious coating of Vanuatu vanilla and Japanese buckwheat tea, embossed with the brand's signature egret logo, surrounds a gooey middle of coffee praline, maple crèmeux, crunchy hazelnut biscuit and reconstructed pecan sablé. It's a thoughtful balance between the delicate flavours of vanilla, the richness of hazelnut and distinct savoury notes, coupled with a nice contrast in textures.

We can see the Matcha Kaya Pistachio ($14), another of the four signature entremets, being a crowd-favourite. This Paris-Brest and Mont Blanc crossover is a green-on-green-on-green stack, with roasted pistachio cream, matcha cream and kaya-pandan cream – a combination that sounds accidental, but surprisingly works. Plus, we much prefer its crispy, light filo pastry tart to the regular buttery, crumbly shells elsewhere. It is, however, definitely on the sweeter side. 

The evening desserts, only available for dine-in, allow Louisa and her team more flexibility to work with perishables such as seasonal fresh fruits, sorbets, meringue and the like. Priced at a costly $28 and up per plate, these are also where her technical chops really show. The Shizuoka Melon ($32) is our favourite of the lot, featuring a matcha meringue shell, Vanuatu vanilla mousse, lime, mint jelly and a watercress-mint ice cream. Granny Smith apples and lime zest brighten it further, while a dash of olive oil rounds out the whole dish. With a sip of the accompanying Riesling, each mouthful tastes complete.

The Yamanashi Peach ($35) is a gentler, more universally lovable option, but also less memorable. Nectar-rich peaches are the highlight, paired with blackberries and yoghurt sorbet for sourness, and earl grey chantilly and rose jelly for their floral character. Can't get enough of tiramisu? The atelier's version ($28) reimagines the Italian dessert with sobacha – similar to the Loulouca – coffee-soaked biscuit cuillère, coffee praline, caramelised pecans and a buckwheat tuile. It's appropriately indulgent and also unapologetically savoury, which seems about right, since Louisa herself doesn't have much of a sweet tooth.

While the tiramisu is set to be a permanent fixture on the evening menu, Louisa intends to switch up the fruit-based desserts. Melons and peaches are prime summertime harvests, but come Autumn, diners can expect seasonal fruits like figs, Conference pears and more. We also hear that full-size cakes will soon be available for takeaways (no slices, whole cakes only), so keep your eyes peeled, or follow the shop's Instagram page for updates.

Loulouca's ice cream and day entremets are the smarter buys, and since you're here, get the $55 Discovery Set to make your money's worth. It's the ideal gift for just about any occasion, from client meetings to housewarming parties. We are less convinced about the evening menu, which has no shortage of technical brilliance. But for around $30 a plate, you'd have to be a real dessert buff to be willing to bite the bullet. It's an ambitious undertaking nonetheless – plating desserts as if they were mains – and perhaps one only Louisa and a few others would dare attempt. When we ask what sets her desserts here apart from Odette's, she doesn't hesitate: "Honestly, it was me then, and it's still me now."
