Narisawa, a two-Michelin-star Japanese restaurant in Tokyo, will be presenting its award-winning cuisine in Singapore from March 24 to April 30. The five-week residency is part of the Mandala Masters programme, where they stage culinary residencies graced by the likes of renowned chefs such as Mauro Colagreco, Gaggan Anand and most recently, chef couple Virgilio Martínez and Pia Léon.

As the only restaurant in Asia to have been consecutively awarded in the World’s 50 Best for the last 15 years, Narisawa is recognised for its unique “Satoyama” cuisine where he harnesses the freshest seasonal ingredients to honour the traditional food culture of Satoyama. In each exquisite nature-inspired plate, diners can expect a heavy emphasis on nutrition and sustainable gastronomy.

One of his enigmatic interpretations is “Bread of the Forest” (pictured above), where one can witness the bread’s natural yeast working its magic on a captivating bed of seasonal flowers and fruits. The residency is set to feature a new version that is tailored to using sustainably sourced ingredients unique to Singapore. In line with the culinary vision, diners can also expect local and regional produce – sourced mainly from Malaysia and Indonesia – weaved into their existing signature dishes.

While the entire menu isn’t set in stone, Narisawa reveals that half of this pop-up menu is dedicated to showcasing new dishes. In the drinks department, Narisawa hopes to entice tipplers with never-before-served sake and Japanese wine specially curated to pair. One of the sakes is Masuizumi by Masuda Sake Company, a rare hand-brewed sake that is exclusively brewed for Narisawa and guided by his gastronomic vision.

Tickets are as good as courtside seats as the prolific chef will be on-site at the intimate 20-seater restaurant for the entire five-week residency. Both lunch (from $518) and dinner (from $748) are served alongside his 15-strong crew from his two Michelin-star restaurant. This one-of-a-kind dining experience is only possible as the Narisawa restaurant in Tokyo undergoes renovation. Narisawa is also looking forward to opening an outpost in Shanghai later in May.

Bookings for Mandala Club Members will commence on February 20. Non-members can sign up for priority access here before the general public release on February 23.
