Shake up your Sunday afternoons with this collaboration between two local heavyweights

Note: This event has been postponed due to the health restrictions currently in place around Greater Sydney.

Renowned Melbourne-born gin-maker Four Pillars set up its first Sydney outpost in the heart of Surry Hills in 2020, featuring a laboratory, functioning distillery and cocktail bar, Eileen's. Now, it's stirring up your weekends with a new take on Sunday afternoon drinks.

The Four Pillars team will be partnering up with local bars twice a month for good vibes, good drinks and some healthy, old-fashioned rivalry. First off the block? A collaboration with Re-, the new sustainability-focused bar by Matt Whiley, which is aiming to be as waste-free as possible. Whiley will join forces with Jimmy Irvine, Four Pillars' 'creative director of gin drinks' (name a better job title) on Sunday May 16 from 3pm. Bartender Evan Stroeve, who was just awarded Australia’s Best Bartender in the 2021 Diageo Reserve World Class Competition, will also be behind the bar. 

Grab drinks from both Re- and Eileen's Bar at Four Pillars: pick from a truffle Martini; a 'Fino Colada', with sherry cask gin, apera, pineapple and coconut; a 'Stroeve Light' using Four Pillars' new Spice Trade gin, yuzu koshu, sansho pepper and watermelon soda, and more. Canned drinks are also available: try the collab umeboshi lager from Yulli's Brews and Rara Ramen, or an Empirical Spirits cocktail with carob, fig leaf and lemon myrtle.

RaRa Ramen has been tasked with plying guests with snacks and Dibby Dibby Sound System is hitting the decks. No bookings required – just stroll on in.
