What do you mean, you don't already have National Croissant Day marked and underlined in red on your calendar? In honour of this day, which falls on January 30 each year, pastry chef Ali Balapurwala and the team from Threefold Pastry will be whipping up a gigantic version of the humble, flaky pastry in Parramatta Square tomorrow (January 29).

Threefold Pastry knows a thing or two about croissants. Under its sleek counter in the West's newest precinct, Parramatta Square, you'll find gourmet pies, flaky tarts, and a variety of croissant flavours including a coconut and raspberry one injected with verbena curd, and a savoury three-cheese version packed with layers of smoked leg ham, cheese, mustard and a sprinkle of pickled chilli.

Threefold Pastry's multilayered, blown-up version of a croissant will come to weigh approximately 1.2 kilograms in total – and it'll be thrice-folded, to buttery perfection. You can even watch the historic event take place, if you swing past the store between 11am and noon on Friday, January 29.

Find Threefold Pastry at 12 Darcy Street, Parramatta 2150.
