Spend New Year’s Eve with front-row seats for the fireworks
This New Year’s Eve, Sails on Lavender Bay is hosting a nine-course degustation dinner to showcase the menu of newly appointed head chef Jim Wilson. The dinner, which takes place only moments from the Harbour Bridge and the Opera House, will be the perfect vantage point to witness the Harbour’s famous fireworks and to welcome in the new year.
Chef Wilson, who's worked closely with Greg Doyle and Tony Bilson, joins Sails after his overseas ventures in Paris and London. His menu, which has a strong focus on seafood, features dishes such as Eastern King prawns with confit lemon, sea purslane and beurre blanc, and pink snapper with pipis, sprouts and lemongrass sauce.
