Professional chef-turned-baker Matt Malchi studied the science of sourdough in California and brought his knowledge back to Oz and opened Mattisse. The bakery's slow food philosophy results in bread without preservatives, additives or chemicals. Gluten free sourdough and fruit loaves along with a variety of French pastries are also in stock.
