Where to get a Negroni in Singapore

Three ingredients, one timeless concoction

The Negroni is a classic cocktail that has long been enjoyed and celebrated, by people all around the world. For more than 100 years, tipplers have reached out for this bittersweet swig before a good meal. While it is known to stimulate one’s appetite as an aperitif, it also boasts refreshing, delicious, and well-balanced flavours we've all come to love.

As far as stories go, it is widely believed that the drink was first invented in 1919 by Count Camillo Negroni in Florence, when he requested gin – instead of soda water – to be added to his Americano. Today, the Negroni enjoys an appearance on drinks menu everywhere, thanks in part to its simplicity in ingredients; all you need is equal parts of gin, sweet vermouth, and Campari.

Its popularity has even culminated in an annual Negroni Week affair, where bars all around come together to reimagine this timeless tipple – and contribute to an altruistic cause where proceeds go to chosen beneficiaries. This year, the celebratory week-long affair happens from September 18 to 24. Pay these bars a visit and raise a toast with the classiest of tipples.

The tangerine-tinted tipple puts the juicy pink guava fruit on the pedestal. Dubbed the Nuthin’ But a “G” Thang ($24), the cocktail is inspired by head bartender Naz's recent Peruvian escapade. The dry and tropical drink is derived from infusing pink guava into the vermouth and combining it with gin and Campari.

At the swanky Jungle Ballroom, award-winning head bartender Adrian Besa, who is one of the most celebrated bartenders in the region, serves up Breakfast 2.0 ($24). The perfumy blend uses Indian gin, robust coconut-infused Indonesian coffee liqueur and of course, Campari. The result is a dessert-like tipple with lush toffee-like sweetness and chocolatey finish.

Up-and-coming head bartender Chuan helms the bar at the beautiful Night Hawk. Here, he stirs up a solid tribute to the mezcal negroni with the scintillating Binary Byzantine ($25). The timeless serve doesn't stray far away from the classic, it drinks smooth with a touch of smoke layered with faint sweetness from dark chocolate liqueur and bitterness from the Campari.

The stalwart reimagines the classic negroni with a tongue-in-cheek version where it heroes ingredients of none other than nutmeg and clove. Made by resident bartender Michelle Loh and titled the Spiced Paradise ($25), it combines spiced gin, kaffir lime infused vermouth and Campari flavoured with discarded lemon husks. The result is a refreshing string of zest and spice with a subtle sweet herbaceous finish.

This is probably one of the best places to get a Negroni in the city with a side of stunning views of Marina Bay. Assistant principal bartender Alan Teo takes the smooth drinking aperitivo and elevates it with hints of melon and cherry tomato. Don't worry, the classic sweet and bitter backbone still remains as Italian as it gets.

Wallich Manor

Yet another fresh face in town is Wallich Manor. Head bartender Aslam drops the Wallich The 9th ($24), a whimsical version of the classic that promises multiple dimensions and textures with each sip. He cleverly combines chrysanthemum-laced pisco, elderflower-forward Lillet Blanc, and lavender bitters finished with orange espuma on the top. The floral and herbaceous blend drinks mildly toothsome with a hint of warmth from ginger.

Brooklyn Bar

The new kid on the Ann Siang Block is one that brings a slice of East New York to our backyard. At Brooklyn Bar, head bartender Danny Dave locks in on the notorious Mr. Bumpy J ($22) as a storied tribute to NY godfather Bumpy Junior – best known as the gangster mogul who often gives back to his community. The sbagliato-inspired tipple combines apricot-infused gin, raspberry vermouth, and Campari finished with prosecco. The result is silky smooth, fruity and fizzy. The only crime is not finishing what's left in your glass.

Head mixologist Ong Jun Han mixes up the Sparrow's Sojourn ($25), a drink that is as dapper as the avian-inspired Plume itself. Aged in a barrel, the spirit-forward tipple is bold with oak and vanilla flavours. Definitely a version that is reserved for the brave.

Known for its in-house ageing program, Manhattan's aged Negroni is an evergreen classic. Named the Solera Aged Negroni ($28) – a long-standing favourite from the bar’s rickhouse – after Count Camillo Negroni, it showcases an inimitable complexity only achieved from barrel ageing.

As dusk settles, venture to the back of the room, past velvet drapes, and enter Stay Gold – a sleek, neon-lit drinking lounge. Owner-head bartender Jerrold Khoo rocks up a Coffee Peanut Negroni ($25), a sweet, savoury, and nutty mix of bitter coffee and floral botanicals.

The ritzy bar has got a pretty interesting take of the classic Negroni that speaks to fans of umami tipples. Inspired by the timeless Federico Fellini film "La Dolce Vita", which embodies the high life, the High Society ($25) isn't your usual equal build. It sees a unique combination of Hendricks Gin, Campari, house-blend red sweet vermouth and the secret weapon of porcini mushrooms. The perfect icing on the cake is a cheese cracker garnish that accentuates the alluring savouriness lusting over your palate.
