Where to sip and savour now that Dry January's over

Dry January's out, cocktails are in. Or wine. Or champagne. And you can sip on a bit of everything at these hottest bar openings in Singapore. Fans of Japanese aesthetics should definitely check out the newly opened Pop City X Pony, which has been packed out each week since launching last December. Those who love their bubbly – and champagne in particular – now have an alternative spot to hit up aside from the tried and tested Convivial. Hint: It's located behind a sandwich deli along Amoy Street. For a romantic hideaway with cocktails set against a gorgeous city backdrop, no one does it better than Abode, which most will recognise as the rooftop café Pout in the day. Meanwhile, riverside views, a vibrant neighbourhood setting and wine go hand in hand at Barely Aged, located along the Robertson Quay. And finally, for unfussy cocktails at reasonable prices in the CBD, we recommend heading to Confession Room along Boon Tat Street for your next weekday tipple. Design, music and drinks blend seamlessly at the new Pop City X Pony on Cecil Street. The Japanese city-pop-inspired bar takes over the second-floor rum den that was once Sugarhall, and is operated by the same award-winning Jigger & Pony Group. It’s a collaboration with House of Suntory, but the branding stays subtle and refined, with a big focus on the spatial design and cocktails. Get close to the action at the bar counter, gather in groups at the Tasting Commons or After Hours Salon with modular furniture for flexible seating, or enjoy a private tasting and listening session at the cosy nook that is Bar Mixtape. The drinks here have the characteristically Jigger & Pony qualities of being deceptively simple yet nicely balanced, with the whisky-based Pop City Sour as the headlining cocktail. Matcha and hojicha lovers can also try the Matcha Ramos Fizz ($27) and a hojicha-tinged espresso martini ($25) to experience glammed-up, boozy versions of the wildly popular teas.

Blink, and you'll miss it. This new Amoy Street bar doesn't have a loud entrance or obvious signage. In fact, it's located surreptitiously behind a red door in an Italian sandwich deli. But once you push past its unmarked entrance, you're greeted with a buzzy, energetic lounge, decked out with checkered floors, gold details, pink lights and LED screens. The bubble installations on the ceiling tell you everything you need to know: It's all about champagne here. Find everything from Champagne Louis Roederer and other renowned houses, to rare grower selections picked out by the knowledgeable team – the same folks behind speakeasy concept 60ml by Asador in Joo Chiat. Or sip on one of its newly created champagne-based cocktails. Music plays an equally important role here, with DJs like Jeremy Boon and EJ Missy spinning till late, especially on days when party runs till 4am. Tip: Pop by with the ladies for the weekly Wednesday Soiree, where you'll get to enjoy two hours of unlimited champagne.

Oh, we love a good rooftop bar. Especially one that feels like you've discovered a cosy lookout point that most don't know about. And Abode is just that. By day, the space is home to Pout Café, which caters to the caffeine-deprived and fans of drink combinations like honeycomb lattes and coconut matcha clouds. But by night, the stylish interiors and wide window panel behind the counter take on a different personality – one that's sultry and intimate. Choose between indoor and outdoor seats depending on your preference, and start perusing the cocktail menu, where prices are pleasantly nett. Cocktails are priced at a wallet-friendly $19 each, with popular hits like the LKY Ondeh with dark rum, banana, coconut and pandan. A decent whisky and wines by-the-glass selection are also available. And while you can't get a bite of Pout Café's burnt Basque cheesecake with yoghurt here, other light bites (from $15) like jamon crostinis and beef sliders should line the stomach nicely. To sweeten the deal, pop by for $14 happy hour cocktails from 6.30pm to 8.30pm daily.

Wine geeks would have definitely heard of BoundbyWine, a humble neighbourhood bottle shop in Joo Chiat with a broad selection for every dinner pairing or house party. Recently, they've found a second home in Robertson Quay, opening a sister brand called Barely Aged, which functions more as a bistro than a retail outlet. The focus? Wines (duh), and gorgeous cheese boards. The relaxed, riverside hideout ditches all the airs and tight collars, and encourages guests to taste widely and adventurously. Which explains its strong by-the-glass wine programme, bi-monthly rotating menu of around 30 labels, and weekly rotation of anywhere between 15 to 20 labels. On occasion, the bar will host winemakers in casual tasting sessions, who'll share more about their brands. And say you're not feeling wine that day, Barely Aged also serves up $20 pours of Dirty Sips' signature cocktails – for the uninitiated, they're an offbeat cocktail bar in Tiong Bahru making great drinks with kitchen scraps. Or, you can just get a customised cheese and charcuterie board and be on your way.
Confession Room finds itself among the company of bars like Goodbye, Alibi, which invite guests to spill their secrets over a drink or two. The new cocktail joint takes over the familiar second-floor den which once housed White Shades (now Lumina by White Shades on Level 4 of the building). Concrete walls, soft-grunge aesthetics – and hey, look at those sick menus inspired by VCR tapes. Founder Adonis Endozo Reyes cut his teeth at Shangri-La Singapore's renowned Origin Bar, and here, he's crafted 10 signature cocktails, starting from wallet-friendly prices of $22. Sip on light starters like the gin and spicy, citrus-forward NoName ($22), or go for headier concoctions like Guy Called J ($22) with Monkey Shoulder, goji berries and quickthorn. Seven wines by-the-glass make for an easy alternative, and the food menu consists of small plates like corn ribs ($14) and truffle fries ($15), as well as heartier mains like chicken adobo ($28) and ribeye steaks ($39).
