Time Out says

The CBD gets a tropical summer pop-up bar

A jumble of coconuts, rum, pineapples and fun will be taking over the former York Trading Co site for a summer time pop-up bar. The boys behind the nearby Burrow Bar (Chau Tran and Bryce McDonough) will join forces with Sydney Rum Club’s Tom Bulmer to re-create a tiki bar in the middle of the city going by the name of Lost Luau.

Naturally the menu will focus on tiki drinks, with Bulmer (formerly of Ms.G’s) running the bar. Expect tropical holiday classics – Mai Tais, Pina Coladas and more – plus some fresh rum-based additions.

On the food front they've enlisted Joy Mou (ex-Monopole) as restaurant manager, alongside chef Phil Spence and the Island Boys. They'll be whipping up Caribbean snacks until late, and with Spence's Jamaican heritage and experience in some of London's best Michelin starred restaurants, the food will hopefully pack some seriously flavourful punches.
