Andrea Aprea, the visionary Michelin-starred Neapolitan chef from Restaurant VUN of Park Hyatt Milan, is collaborating with the Grand Hyatt's Grissini team to bring Chef Aprea's signature six-course menu to Hong Kong for three days this October. Chef Aprea is known for his bold experimentation, and some of the creations on the menu include a contemporary take on the caprese, consisting of sugar balloon with mozzarella foam on top of a basil and tomato purée, as well an an inventive cuttlefish alla diavola with mashed potatoes and dehydrated diavolo sauce. $1,180.
