For an upscale meal paired with exclusive glasses of bubbly, reserve a table at two Michelin-starred restaurant Ta Vie. For the whole month of August, the Japanese-French restaurant is collaborating with Maison Mumm to pair its best Grand Cru Champagnes, RSRV, with chef Hideaki Sato’s exquisite seasonal eight course menu ($4,080/person). The collaboration also celebrates chef Sato’s new appointment as the first Maison Mumm RSRV special culinary ambassador in Asia. The limited-edition menu will serve four exclusive RSRV Champagne vintages, including the vibrant Cuvée 4.5, the delicate and floral Blanc de Blancs 2014, the beautifully balanced and toasty Blanc de Noirs 2012, and the elegant Cuvée Lalou 2008. Standout dishes from the menu include the chef’s signature Hokkaido crab and Japanese sweet corn paired with RSRV Cuvée 4.5 and the braised abalone with baked pastry puff shell paired with Blanc de Noirs 2012. For dessert, chef Sato is serving a delicious peach compote with a candy case shaped like a longevity peach bun and doused in Champagne. If supply permits, you will end your meal with a generous slice of the coveted Miyazaki mango with mousseline cream.
