JimmyRum is Victoria's first rum distillery and bar. Out near the Mornington Peninsula, JimmyRum has been distilling and ageing their base spirit, derived from molasses or sugar cane, in wooden barrels since around 2018.
Inside the 500 square-metre shed, there's a large bar with the four varieties of rum currently available – Barbados, Silver, Oaked and navy strength. Taste through the range or choose rum-based cocktails like a Dark and Stormy, Cuba Libre, rum-based Mojitos and Daquiris. You're also encouraged to drink JimmyRum the way people enjoy whisky – neat in a rocks glass and opened up with a few drops of water, or over hand-cut ice.
