Welcome to Pomelo Rooftop where the seltzers are created, carbonated and canned by the very team that serve them to you.

On the corner of Bourke and Russell Street, via a somewhat ambiguous looking staircase situated in Martin Place, is Pomelo Rooftop. Named after the granddaddy of the citrus world, Pomelo is the place to be this summer. 

They don't take bookings, it's bar service only and it's totally worth it. Why? This team take their drinks seriously. Coming to you from the same team that created the experimental cocktail bar Bouvardia, Pomelo is a rooftop bar with a difference. 

Not least of all because of their close-loop waste program. Collaborating with Bouvardia to minimise waste from Pomelos' seltzer production process fruit remnants head to Bouvardia to be canned, while banana and lime waste is used to create Pomelo's signature banana daiquiri seltzer. 

Pomelo rooftop is the ultimate hot vax summer destination with its selection of seltzers and locally sourced brews and wines.
