Whether you believe pavlova is a true blue Aussie dessert or you swing hard towards our Kiwi neighbours, it’s hard to deny that pavlova is freaking delicious. So when Melbourne gelateria Piccolina decided to add it to a trifle and throw in some gelato, it clearly invented something that's come straight outta flavour heaven.

To celebrate Australia Day, Piccolina Gelateria will be serving a special pavlova trifle gelato cake to the masses. This dessert, which is available for pre-order right now, features vanilla gelato and raspberry sorbet layered with a passionfruit curd and shortbread crumble and topped with toasted Italian meringue and a raspberry gel. It’s served in a big glass trifle bowl, and you get a special Piccolina cooler bag to transport it in.

The cake costs $85 (including cake, trifle bowl and cooler bag) and serves 18 to 20 people. It will be available for collection from Friday, January 18 and you can get it in-store at Piccolina Collingwood, Hawthorn and St Kilda (but you’ll need to pre-order it via this link).

Did you hear? You can get unlimited pizza and bottomless booze at 400 Gradi this summer. Want more Australia Day fun? Here's what to do on the long weekend.
