Pastuso – Melbourne's premiere Peruvian restaurant on ACDC Lane – will be celebrating this staple meat of Peru with a special lunch that showcases alpaca meat. Chef Alejandro Saravia has prepared a six-course feast that showcases the animal from head-to-tail, using alpaca farmed at Illawarra Prime Alpaca in Berry, NSW.
Start with Charqui de Alpaca (that's Peruvian style jerky) served with pickles, then move on to pulled Alpaca neck croquettes with smoked chilli salsa and rocoto pepper sauce, seared loin with ponzu and sweet potato chips, Alpaca shoulder pastrami, and spiced short ribs with smoked chill salsa, grilled pumpkin and celeriac puree.
