So you’re pretty familiar with the Duke of Wellington; the historic Flinders Street pub with the huge parmas and top-notch bar menu. Now, you’re about to meet the Dutchess, and we think you’ll take a fancy to her. The brand new bar will take over the third floor of the Duke, with an equal focus on food, drink and great music. It’s the new project for Craig Ellison and Michael Thiele’s Open Door Pub Co; owners of venues including Perseverance, Star Bar and the College Lawn. The theme here is New York – think oysters, scallops and dry-aged steaks by the Press Club’s Justin Wise, as well as cocktails by New York’s own Ben Hehir.

Like New York, you can dine in the 110-seat restaurant until midnight – and drink 'til even later. Dutchess opens Friday December 5, and we reckon you’ll want to book in advance.
