At Hellenic Republic, the saganaki is squeaky and slightly crunchy at the same time, the loukoumathes and moussaka almost beat yiayia's, and the salads are crave-worthy (there's a reason why everyone tries to copy the grain salad for work lunches).
Focusing on Greek fare done the traditional way. While owner George Calombaris is better known for deconstructing, dehydrating and foaming the heck out of his dishes on MasterChef, at Hellenic Republic dishes are presented simply and honestly, with particular focus on quality ingredients. Traditional dishes are presented in a more refined way, but still the best way to experience Hellenic Republic is by ordering big over a long lazy lunch. You'll want to wear your eating pants for this one.
