Italian Secrets: A Spring Wine Dinner with Chalmers Wine Co

Award-winning Victorian family winemakers Chalmers Wine Co will be hosting a seasonal five-course dinner at the Vincent, which will showcase the winery's Italian varietals.

Chalmers Wine Co's Tenille Chalmers will host the evening, passing on her in-depth knowledge of the wines and how they complement each of the five courses.

Start with a canapé of herbed white anchovy with micro fennel and tomato on a garlic crouton, followed by king fish ceviche with blood orange, radish and chilli pangrattato and crab ravioli with consommé, burnt butter and capers. A main of confit duck leg with lentils, radicchio and blood orange will go well with a robust red. Then finish with a cheese course of pecorino wrapped in briola leaves, with lavosh and quince. Wines will include Chalmers Wine Co's Felicitas sparkling, Vermentino, Fiano, Aglianico and Sagrantino. 

The dinner takes place at the Vincent on Wednesday September 6, from 6pm. Tickets are on sale now for $85. Given that their winter wine dinner sold out, we recommend securing your spot ASAP.
