Gone are the days when the upper end of Collins Street (dare we say, the Paris end) was a food desert. 

One of the many cafés serving the breakfast and lunch needs around the 80 Collins Street precinct is Maverick, whose neutral tones, cheerful plants and welcoming staff encourage a sit-down meal, though takeaway is also available. The café initially opened in June 2020, and if you know anything about June 2020 in Melbourne, it's that it wasn't an ideal time to open a café. But the venue weathered the hospitality storm and came out the other side ready to sling eggs, toast and waffles to all and sundry. 

It's not just any eggs, toast and waffles, though. Maverick's toast is a thick-cut piece of rye topped with multiple types of mushrooms, smoked curd, hazelnut and sage. The whole thing comes together in a savoury mixture of textures that play beautifully. 

The waffles won't just look delightful on your Instagram (though they will); they are perfect for those who love sweet breakfast. Thick, sweet waffles, fluffy on the inside and with a crisp exterior, come topped with strawberries three ways (fresh, freeze-dried and macerated) and a gorgeous quenelle of cream. 

And the eggs are taken to the next level too, with the Benedict laid top housemade pastrami, potato hash and housemade pickle. It's topped with béarnaise sauce, instead of the more traditional hollandaise, for extra zip. 

Breakfast is served all day till 4.30pm, and there are lunch options on the menu, too, such as a herb-roasted chicken roll with buttermilk dressing. If you're feeling like a little something extra at lunchtime, there are a few wines, beers and classic cocktails available.
