Inspired by fellow Pom Tom Kerridge (and his two-Michelin-starred pub, The Hand and Flowers), Michael David Clay has opened The Two Badgers in St Kilda. Diners can expect elegant flavour combos – smoked-trout mousse, roasted beetroot, hazelnuts and crème fraiche, for example – dished up in an informal setting. Fans of the craft beer scene will be keen to try the new brews from Australian Brewery, which recently launched in NSW; caffeine snobs will be pleased to learn that the restaurant serves Proud Mary batch brew single origin coffee – forgo a teaspoon of sugar and order the lemon and pine nut tart instead.
