Combine your love of good food, good company and even better booze at the Bushmills Whiskey Causeway Collection Dinner – a seven-course degustation celebrating the release of three limited edition drops from the world’s oldest licensed whiskey distillery.

It’s taking place on March 3 at Bar Liberty in Fitzroy, and will be hosted by Hayley Dixon (Bushmills' spirits specialist) and Emma Cookson (a whisky specialist at online retailer the Whisky List). Award-winning bartender Nick Tesar is in charge of the drinks, while head chef Zachery Leon Furst is the culinary mastermind behind the set menu.   

You’ll receive a cocktail featuring a 10-year-old Bushmills whiskey upon arrival, and two glasses of wine to pair with the meal. But the highlight of this feast will be the opportunity to try three special tipples: the 2006 Marsala, 2011 Banyuls and 2008 Douro. These are part of the Causeway Collection, a set of coveted, limited edition whiskeys from the Old Bushmills Distillery. The Causeway Collection celebrates extremely rare and unique cask finishes, and have been produced to reward discerning drinkers and showcase Bushmills’ single malt excellence. Both the 2006 Marsala and 2011 Banyuls casks have previously been released exclusively to Australian drinkers via the Whisky Club.

“More people are discovering that Irish single malt whiskey is wonderfully approachable because there are so many layers to it,” explains Hayley Dixon. “Bushmills’ single malts are particularly attractive to many palates, whether you’re a new or established whiskey drinker.” 

“We are so excited to host this event alongside an iconic Irish whiskey brand like Bushmills,” says Emma Cookson. “Guests have the chance to enjoy the limited edition Causeway Collection range and releases like the 2008 Douro cask finish, which is delicious!"

Bushmills has been distilling since 1608 (when the area in Northern Ireland was first granted a licence to do so), and it offers a broad range of aged, rare and innovative Irish whiskeys.
