A deli that is rightfully described as a mozzarella laboratory
Got milk? These guys do – any way you want it. Carlton’s dairy dealer sells un-homogenised milk by the litre in old-school glass bottles (we dig the cream still bobbing on top), and they set a decent buffalo milk yoghurt too. But we’re all about the handmade cheese here. There’s fresh mozzarella, salted ricotta and stringy smoked scamorza for adding an extra dimension to your pizze, plus tender baby boconccini, and snowman shaped, butter-filled mild provolina. They’re all handmade on premises daily and sold out of the oh-so-country pristine white and cornflower blue store. Get a load of the liquid centred burrata – a fist-sized mozzarella ball filled with cream and curds. They have crusty bread and tomatoes on hand too, so load up and find a darkened alley for some alone time.
