Josh Niland has been making waves (excuse the pun) in the way the world views seafood for the last couple of years at his unassuming diner, Saint Peter. He's garnered international interest and was even shortlisted for ethical thinking at the World Restaurant Awards, so it was only a matter of time until someone offered him a book deal.
To launch his book, The Whole Fish Cookbook, which talks about the nose-to-tail of fish butchery and cookery, Niland will be cooking five-courses at Supernormal showcasing his techniques and speak about his seafood philosophy on Wednesday, September 11 from midday. Expect dishes like Niland's salt and pepper Hapuka eye chip; yellowfin tuna and swordfish bacon cheeseburger; and a dessert of chocolate and Murray Cod fat caramel crown.
Bookings are essential for this lunch and can be made by calling or emailing Supernormal. The lunch will set you back $205 and includes the five-course lunch and a signed copy of the book. While it sounds a bit pricey, it is only a fraction of the cost of flying up to Sydney for a meal at your leisure.
