1. Cherry Garden by Chef Fei


What is it? Last year, the time-honoured Cherry Garden at Mandarin Oriental Singapore returned as Cherry Garden by Chef Fei, and is now helmed by the same chef behind two-Michelin-starred Jiang in Guangzhou.
Why we love it: The signature Chaoshan-style yu sheng is hands down the best that we've tried this year. Fresh vegetables are painstakingly julienned by hand – not machine-sliced – each day, resulting in a noticeably crunchier texture. The colourful medley is topped with fragrant, crispy taro, pumpkin seeds, Wujiang salted vegetables, and a small dose of pickled chillies for a faint hint of spice. The crowning ingredient isn't the smoked salmon in this case, but a luscious homemade sour plum sauce that's more savoury than it is sweet. Each lo hei session is concluded in ten tosses, with accompanying auspicious phrases provided on a card.
Price and details: The standard smoked salmon yu sheng goes at $138, while top-ups of sliced abalone, lobster meat and more can bump prices up to $198, $248 or $308 for takeaways.
