The much-hyped Sydney Fish Market finally reveals its opening date and restaurant line-up

The largest fish market in the Southern Hemisphere is opening this summer – and it’s one big catch we’ve been waiting for

The opening date of the new Sydney Fish Market has finally been announced, with Sydneysiders able to get their hands on fresh seafood come Monday, 19 January 2026. That means you’ll be heading to the OG Pyrmont site for your Chrissy crustaceans.

As well as selling sustainably farmed oysters, wild-caught fish, prawns and lobsters, Sydney Fish Market will be home to 40 stores – including incredible restaurants, cafés, delis and bars – all under one roof, creating a world-class destination that’s estimated to draw in more than six million locals and tourists annually.

The completion of the largest fish market in the Southern Hemisphere has not been without its setbacks, however, including significant delays, a voluntary administration and legal battles, with the project carrying an estimated cost of $836 million.

The incredible new building, which overlooks Blackwattle Bay, boasts a striking wave-like roof kitted out with 400 solar panels that light up with colour at night. The market will also feature a variety of transport options, including two nearby light rail stops, a pedestrian path connecting to the foreshore walk, and a new public ferry wharf that’s still being built – once complete, it will connect Blackwattle Bay to Barangaroo.

Highlights at the new Sydney Fish Market include Luke Nguyen’s flagship Southeast Asian restaurant Lua; Malaysian diner Tam Jiak by Ho Jiak by Junda Khoo; first-class gelato purveyors Cow & The Moon; award-winning German bakery Luneburger; TJ’s Po Boys by Trippas White Group, which will be selling lobster rolls, burgers and craft beers; Tin Tin Harbour, selling yum cha alongside seafood; fire-powered Turkish go-to Hamsi by the Efendy Group; and Olivetta, Sydney’s first specialty olive oil concept store.

Premier of New South Wales Chris Minns said: “The new Sydney Fish Market will be a game-changer for our city, delivering the best seafood market anywhere in the world, right here on Sydney Harbour.

This will be a place where locals and visitors can experience the very best of Sydney’s food, culture and waterfront. It will create jobs, boost tourism and cement Sydney’s reputation as one of the great culinary capitals of the world.”

Sydney Fish Market CEO Daniel Jarosch added: “We’ve waited decades for this new market, and taking this time means we can open with a bang. A January opening gives tenants the time to finish fit-outs this year, and then train staff and prepare operationally, so that they are ready to deliver an incredible experience from day one.

Seafood lovers are expected to turn out in record numbers for the famous 36-Hour Seafood Marathon to enjoy a ‘last hurrah’ at the existing Pyrmont site this Christmas.

It’s the end of an era and the beginning of something extraordinary.”

The huge new harbourside Sydney Fish Market will be a pearl in the transformed Blackwattle Bay oyster, complete with almost 1.5 acres of public space, new pedestrian and cycling links including a 15-kilometre connected waterfront promenade from Rozelle Bay to Woolloomooloo, and more than 1,000 new homes at the old fish market site.

What a catch indeed. Bring on January.
