A Filipino food legend joins forces with one of Sydney's top chefs for a one-off lunch to remember

Fireside is a series of collaborative dining experiences curated by Firedoor’s head chef, Lennox Hastie. The concept is simple: Hastie invites friends and fellow chefs from around the world to the restaurant’s electricity-free kitchen, where they combine their distinctive styles and cook together over the live fire.

Past guests have included local heroes like Belles Hot Chicken’s Morgan McGlone, Momofuku Seiobo’s Paul Carmichael and Thi Le from Anchovy in Melbourne; as well as big names from overseas, such as Carlo Mirarchi from cult Brooklyn pizzeria, Roberta’s, and fermentation expert Sandor Katz.

On Sunday, March 15, another international headliner will be making her way to Surry Hills to fan the flames. Margarita Forés is a name that will be familiar to Filipino foodies, a true pioneer in the island nation’s culinary landscape. She grew up with no formal training and, after immersing herself in kitchens across Italy, is now at the helm of a restaurant empire in the Philippines that includes Cibo, Lusso and a farm-to-table restaurant, Grace Park. In 2016, she was named Asia’s best female chef by the World’s 50 Best Restaurants.

Together, Hastie and Forés and will be whipping up a feast that fuses his signature style with her singular Italo-Filipino approach. There are two sittings, at noon and 2.30pm, and tickets for the six-course lunch cost $150. These events always sell out, and we’re guessing this one will be no different.
