Hanwoo is a breed of cattle native to the Korean peninsula. Raised with attentive care, these cattle enjoy a grain-fed diet often enhanced with natural additions like fermented pine needles and barley, which infuse the meat with distinct depth and flavour. A strict Korean grading system, overseen by the Korea Institute for Animal Products Quality Evaluation, rates Hanwoo from 1 to the ultra-premium 1++ grade, showcasing exquisite marbling, bright red colour, and fine texture. Thanks to these rigorous standards, Hanwoo holds a distinguished place in the world of luxury beef, captivating chefs and diners alike with its perfect balance of fat and lean meat.

Good news: you don’t need to hop on a plane to Korea to enjoy Hanwoo’s exceptional flavour. This October, the Korea Agro-Fisheries and Food Trade Corporation Hong Kong Branch (aT Center Hong Kong) is partnering with SKYE Roofbar & Brasserie at The Park Lane Hong Kong for a month-long exclusive celebration of Hanwoo beef. Executive Chef Florian Muller, a maestro of French-Asian fusion, has designed two bespoke menus to spotlight Hanwoo’s versatility and nuanced flavour profile.

Mr. Hyunhoo Kim, General Director of the aT Center Hong Kong shared, “Our goal is to position Hanwoo as a top-tier luxury beef product in Hong Kong’s highly competitive culinary scene. We aim to deliver an immersive experience that fully showcases the artistry and premium quality of Korean Hanwoo for Hong Kong consumers.”

The Hanwoo Bar Snack Menu features five innovative canapés – from Hanwoo Beef Savory Pancake to Hanwoo Beef Mandoo – perfect accompaniments to SKYE’s signature craft cocktails. For a more substantial meal, the Hanwoo Set Dinner Menu offers delicacies such as beef tartare topped with quail eggs and barbecued Hanwoo striploin served with confit baby gem lettuce and guanciale.
