Over the years, Hong Kong’s beloved egg tart has seen many interesting variations that either raise eyebrows or send foodies into queuing frenzies – think apple and cinnamon, coffee mochi, pistachio knafeh, peach, or pandan charcoal flavours. Some of the savoury egg tart options can be a little bit out there, such as black truffle, parmesan cheese, or corn, but clearly we haven’t seen it all, because there’s a new bakery in town that’s releasing a caviar egg tart.

Tarte by RH was first started by chef Rania Hatoum as a private dining concept that did years of high-end catering, but the brand has now expanded into opening a luxury patisserie. Alongside chef Hatoum’s members-only French-Japanese private Kitchen, RH Fine Dining, the space also houses a chilled bakery counter for their freshly baked tarts, the most eye-catching of which is the Hong Kong Style Caviar Egg Tart ($188), which will be launched on July 1.

An ambitious reimagining of our city’s iconic pastry, a traditional buttery cookie crust will enclose creamy custard and a generous topping of Kaviari caviar in a combination that hasn’t hit our tastebuds before. We do suppose there’s something poetic about combining chicken eggs with fish eggs. Only 50 pieces of this special egg tart flavour will leave the kitchen daily, and we expect crazy queues when this news hits social media feeds.

While you’re there, don’t forget to browse through the retail wall pantry stocked with curated gourmet ingredients and foodstuffs that are hard to find elsewhere in Hong Kong, such as Trikalinos Bottarga ($490) and Plantin Truffle Carpaccio ($240). If you’d like to try chef Hatoum’s other tarts, which she has been creating as a signature dish for private diners and corporate clients like Dior, Omega, and Van Cleef & Arpels, then you might want to make a booking for her private kitchen, which grants membership to her dining club and access to curated dining experiences.

Tarte by RH is located at Shop 307, The Southside Mall, 11 Heung Yip Road, Wong Chuk Hang.
