Forbes Travel Guide 4-Star Italian restaurant Cucina is hosting a short yet compelling culinary residency this May, as Michelin-starred chef Theodor Falser makes a rare Hong Kong appearance. Running from May 14 to 16, the three-day showcase brings Falser’s quietly revolutionary ‘Taste Nature’ philosophy to Marco Polo Hongkong Hotel.
Raised in a six-generation winemaking family in South Tyrol, Falser’s cooking is deeply tied to nature, while shaped by years in international luxury kitchens. His approach strips away excess, allowing pristine ingredients to speak for themselves. It’s a style that has earned him a Michelin star at Johannesstube and a loyal following across Europe and beyond.
At Cucina, diners can experience this ethos through a six-course tasting menu (HK$988), with additional à la carte and lunch options available. The experience culminates on May 16 with a one-night-only wine pairing dinner (HK$1,388), designed to echo the chef’s alpine-meets-Mediterranean sensibility.
Falser’s visit to Cucina spotlights eco-conscious artistry with natural ingredients like monk’s beard, sea lettuce, heirloom tomatoes, and chicory. Savour dishes that balance elegance with depth: seared Mediterranean tuna lifted by citrus and pickled daikon; king crab cannelloni layered with lemon brightness; and a luscious raviolone with Iberico pork pluma and ricotta, enriched by nduja and parmigiano espuma.
