Helmed by Piedmont native and chef de cuisine Francesco Gava, this Italian ristorante and bar offers simple and classic Italian dishes accented with modernity in a menu spanning classic antipasti, fresh seafood, pasta, seasonal dishes, and desserts. Try the ubiquitous Piedmontese dish il vitello tonnato, made with tender veal and creamy tuna, spaghetti acciughe e tomino fresco in a sauce of Sicilian anchovies, garlic, parsley, and fresh Tomino cheese, or share Orata di orbetello in crosta di sale, a whole Mediterranean sea bream in a sea salt crust.
