Originally from New Orleans, Max Levy has worked at some of the best sushi restaurants from New York to Tokyo. He helped start a cocktail renaissance in Beijing with the opening of Apothecary in 2009, and was known for his creative approach to traditional north Asian cooking at his restaurant, Bei, in the Opposite House hotel. Levy is also the proprietor behind Traitor Zhou's Nonkosher Delicatessen, which produces artisanal Chinese and European styled cured meats and bagels. After five successful years of running the Okra brand in Sanlitun, Beijing, these days Levy can mostly be found in Hong Kong where he focuses on his two award-winning restaurants, Okra Bar and Okra Kitchen.
