Chef Vicky Lau of two Michelin-starred Tate Dining Room is opening her latest venture this month: Mora (摩). The new French-Chinese restaurant is located on Upper Lascar Row (摩羅上街) in Sheung Wan, in which it takes its Chinese character. The character also refers to the act of grinding as the menu at Mora will focus on soy-based foods. Considered a pillar of Asian cuisine and culture, the soybean can be used in a surprising amount of ways and comes in a variety of different forms, shapes, textures and flavours. Mora aims to change the way we view and consume soy and many of the soy-based ingredients at Mora will also be created in their own factory. Mora will have set lunch and dinner menus as well as a full a la carte menu.
