The show here is not so much the gambling floor this diner looks over, but the chefs behind the glass wall throwing long strings of noodle across the room into a large boiling vat, shaving dough into a bowl from a plated hat (it'll make sense when you see it) and other circus tricks involving pasta. You choose your own adventure here, mixing up different noodles with your choice of soup base and meats. If the noodle show wasn't enough, the tea ceremony is not to be missed, either.
