This ramen joint in Tsim Sha Tsui looks unassuming, but it's not uncommon to see a long line of people waiting outside to be seated. One Night Camp's speciality is ramen in a rich soy sauce-based shrimp broth, made in-house daily with dozens of pounds of fresh shrimp heads and no additives. After choosing between ramen or knife-cut noodles, each bowl of ramen comes topped with soy sauce-marinated shrimp, sakura shrimp, shrimp broth foam, and a generous glug of housemade shrimp oil drizzled before serving. Aside from their bread-and-butter dish, One Night Camp also offers soft-boiled eggs, soy sauce-marinated oysters and abalone, and rotating specials as sides.
