Time Out says

Experience refined contemporary Chinese cuisine at Quan, a Chinese fine dining venue nestled in the heart of Central. Helmed by chef Justin Yang – runner-up of Chinese culinary TV show The Divine Dish and recipient of the “Young Chef Award” from the Michelin Guide and Black Pearl Restaurant Guide – this eatery specialises in elevated takes on Fujianese cuisine from Quanzhou, Yang's ancestral hometown. In each dish, Yang includes “five elements” that serve as the dish's creative backbone – ensuring it showcases authentic Fujian cuisine, celebrating local seafood, crafting flavours with utmost precision, using precise temperature control, and signifying the organic growth of culinary culture. Expect to savour exquisite creations such as Fujian old wine drunken crab, Rongcheng sweet and sour pork, and red rose grouper with chicken oil and sand shallots.
